Selon une \u00e9tude publi\u00e9e par des chercheurs de l\u2019Universit\u00e9 Laval, six adultes qu\u00e9b\u00e9cois sur dix consomment plus de sucres que la limite recommand\u00e9e par l\u2019Organisation mondiale de la sant\u00e9. <\/strong><\/p>\n<p>Une \u00e9tude publi\u00e9e en septembre dernier dans la revue <em>Nutrients<\/em> montre que la majorit\u00e9 des adultes qu\u00e9b\u00e9cois consomment plus de sucres libres, c\u2019est-\u00e0-dire des sucres ajout\u00e9s aux aliments et provenant des jus de fruits, que la limite recommand\u00e9e par l\u2019Organisation mondiale de la sant\u00e9 (OMS). Des chercheurs de l\u2019Universit\u00e9 Laval arrivent \u00e0 ce constat apr\u00e8s avoir \u00e9valu\u00e9 les habitudes alimentaires d\u2019un peu plus de 1\u00a0100 personnes.<\/p>\n<p>Au Qu\u00e9bec et ailleurs au Canada, il existe tr\u00e8s peu de donn\u00e9es sur la consommation de sucres libres. En effet, les bases de donn\u00e9es nutritionnelles et l\u2019industrie ne fournissent pas cette information. Pour r\u00e9aliser cette \u00e9tude, les chercheurs ont d\u2019abord d\u00fb diff\u00e9rencier manuellement les sucres libres des sucres naturellement pr\u00e9sents dans les aliments en se basant sur un algorithme. \u00ab \u00c7a a \u00e9t\u00e9 une \u00e9tape ardue parce qu\u2019on y est all\u00e9 tr\u00e8s m\u00e9thodiquement\u00a0\u00bb, t\u00e9moigne Am\u00e9lie Bergeron, \u00e9tudiante-chercheuse et premi\u00e8re auteure de l\u2019\u00e9tude.<\/p>\n<p>Pour identifier les sucres libres, les chercheurs ont utilis\u00e9 la d\u00e9finition de l\u2019OMS. \u00ab Les sucres libres sont tous les sucres ajout\u00e9s [au moment de la pr\u00e9paration, de la transformation ou de la consommation des aliments] ainsi que les sucres naturellement pr\u00e9sents dans les jus de fruits \u00bb, explique Am\u00e9lie Bergeron. \u00ab Ils ont \u00e9t\u00e9 extraits de la matrice des aliments \u00bb, rench\u00e9rit-elle. Les sucres libres, notamment ceux consomm\u00e9s sous la forme de boissons sucr\u00e9es et de jus de fruits, sont associ\u00e9es au d\u00e9veloppement de la carie dentaire, de l\u2019ob\u00e9sit\u00e9 et des maladies chroniques.<\/p>\n<p>Par la suite, les chercheurs ont analys\u00e9 les aliments et boissons d\u00e9clar\u00e9s entre 2015 et 2017 par plus de 1\u00a0100 adultes provenant de cinq r\u00e9gions du Qu\u00e9bec. Les participants devaient rapporter \u00e0 trois reprises tout ce qu\u2019ils avaient consomm\u00e9 la journ\u00e9e pr\u00e9c\u00e9dente \u00e0 l\u2019aide d\u2019un outil Web valid\u00e9.<\/p>\n<h3><strong>Un verdict sucr\u00e9 amer<\/strong><\/h3>\n<p>Les analyses r\u00e9v\u00e8lent que les adultes qu\u00e9b\u00e9cois consomment en moyenne 12% de leur apport \u00e9nerg\u00e9tique quotidien sous forme de sucres libres. Or, l\u2019OMS recommande de r\u00e9duire la consommation de sucres libres \u00e0 moins de 10% de l\u2019apport \u00e9nerg\u00e9tique total. Pr\u00e8s de 60% des participants de l\u2019\u00e9tude ne respectaient pas cette recommandation.<\/p>\n<p>Les r\u00e9sultats de l\u2019\u00e9tude montrent aussi que\u00a0:<\/p>\n<ul>\n<li>Les personnes de 50 \u00e0 65 ans sont celles qui consomment la plus faible proportion de leur apport \u00e9nerg\u00e9tique sous forme de sucres libres.<\/li>\n<li>L\u2019apport relatif en sucre libre des Qu\u00e9b\u00e9cois (12%) est sup\u00e9rieur \u00e0 celui des Espagnols (7%), similaire \u00e0 celui des Suisses (11%) et des Australiens (12%), et inf\u00e9rieur \u00e0 celui des Allemands (14%).<\/li>\n<\/ul>\n<p>L\u2019\u00e9tude ne sp\u00e9cifie pas quels sont les aliments qui contribuent le plus \u00e0 l\u2019apport en sucres libres. Toutefois, un rapport publi\u00e9 en octobre dernier par l\u2019Institut national de sant\u00e9 publique (INSPQ) montre que les boissons sucr\u00e9es sont de loin la principale source de sucres libres dans le panier d\u2019\u00e9picerie (58%) suivies des desserts (22%). Selon C\u00e9line Plante, conseill\u00e8re scientifique \u00e0 l\u2019INSPQ, la contribution de ces aliments pourrait \u00eatre encore plus importante puisque les donn\u00e9es sont bas\u00e9es sur les achats alimentaires seulement. \u00ab Au-del\u00e0 de \u00e7a, il y a tout ce qui est consomm\u00e9 \u00e0 l\u2019ext\u00e9rieur de la maison, par exemple dans les restaurants\u00a0\u00bb, sp\u00e9cifie-t-elle.<\/p>\n<h3><strong>Des solutions?<\/strong><\/h3>\n<p>Dans son rapport, l\u2019INSPQ propose diff\u00e9rentes pistes d\u2019action pour r\u00e9duire l\u2019impact des boissons sucr\u00e9es sur la sant\u00e9 : promouvoir l\u2019eau, reformuler les boissons sucr\u00e9es et d\u00e9normaliser la consommation des boissons sucr\u00e9es en r\u00e9duisant leur promotion et leur pr\u00e9sence dans certains lieux ainsi qu\u2019en les taxant. Selon C\u00e9line Plante, \u00ab\u00a0il faut avoir plusieurs strat\u00e9gies diff\u00e9rentes\u00a0\u00bb.<\/p>\n<p>Si la reformulation des boissons sucr\u00e9es ne semble pas s\u2019op\u00e9rer \u00e0 vitesse grand V, il en va autrement pour la reformulation des yogourts. D\u00e9j\u00e0, on retrouve sur le march\u00e9 des yogourts aromatis\u00e9s avec 25%, 30% ou m\u00eame 40% moins de sucre que les versions originales. \u00ab Une bonne partie du travail de diff\u00e9renciation des sucres sera \u00e0 refaire sachant que la composition des produits change \u00bb, constate Am\u00e9lie Bergeron. \u00ab Ce serait plus facile si l\u2019industrie \u00e9tait forc\u00e9e de d\u00e9voiler la quantit\u00e9 de sucres libres \u00bb, lance-t-elle.<\/p>\n<p>Dans les prochains mois, les chercheurs \u00e9valueront l\u2019effet de la consommation des sucres libres sur les facteurs de risque cardiom\u00e9taboliques comme la r\u00e9sistance \u00e0 l\u2019insuline et le tour de taille.<\/p>\n<p><a href=\"https:\/\/www.mdpi.com\/2072-6643\/11\/10\/2317\/htm\" target=\"_blank\" rel=\"noopener noreferrer\">Lire l'\u00e9tude compl\u00e8te<\/a><\/p>\n","protected":false},"excerpt":{"rendered":"<p>Le Qu\u00e9bec devra-t-il d\u00e9clarer la guerre au sucre?
